OPTIMA Vienna Malt

Vienna malt is very close to pale ale malt but is kilned at a higher temperature. As a result, the enzymatic activity of Vienna malt is slightly lower. Vienna malt has a darker colour (EBC 7 to 9) and more sweet malt aromas complemented with subtle melanoidin notes. It gives the beer a deep golden colour.

Vienna malt is traditionally used as a base in German and Austrian Vienna lagers. It is popular in Germany and countries that draw on the German brewing tradition. In other countries, its addition complements the malt profile in styles where multidimensional maltiness is recommended (imperial stout, altbier, etc.). It can make up to 100 percent of the grist.

Aroma: cereal, roasted grains, slightly starchy, husky.
